Almond Coffee
The almonds and vanilla in this recipe make for a fantastic natural flavored coffee! This recipe works well for both drip and press-filtered coffee makers. Please note that in order to brew to your normal preferred strength, you will need to use roughly one and a half times as much of this mixture (by volume) as you would your regular grind.
Makes approx 16 servings
Ingredients:
- 1 cup roasted coffee beans, drip or press-grind
- 1/2 c. coarse ground almonds
- 1 whole vanilla bean, minced
- 1 tsp. fresh ground nutmeg
- 1/8 tsp. almond extract
Directions:
Mix all ingredients and brew in filter- or press- coffee maker – adjust amount of water as needed to obtain your preferred brew strength. Although some people believe it will keep longer, I recommend any ground coffee mixture be used within two or three days, tops, for best flavor!
Cappucino Vivace
This is a very “tarted up” Cappucino! Serves one (but it can be shared!)
Ingredients:
-
-
- 1/4 oz. brandy
-
- 1/4 oz. light rum
-
- 1/4 oz. gin
-
- 1/4 oz. white creme de cacao
-
- 1/4 oz. Galliano
-
- 3 oz (double shot) espresso
-
- 4 oz. milk
-
- 1 tsp cocoa
-
1 tsp sugar
Directions:
Foam milk, and add espresso, cocoa and sugar. In a separate container, mix brandy, rum, gin, creme de cacao, and galliano. Pour liquor mixture into a 10-oz. stemmed glass or large mug. Add cappucino mixture. Top with whipped cream.
Note: If using stemmed glass, avoid breakage by first placing glass under hot water, then placing a metal spoon in glass before pouring coffee mixture. The spoon absorbs the heat.
IRISH COFFEE
“Only Irish coffee provides in a single glass all four essential food groups: alcohol, caffeine, sugar, and fat.” –Alex Levine
Herewith, some recipes for Irish Coffee, starting with the “purist version.” I’m a pretty big fan of Bailey’s Irish Cream in my after-dinner coffee… but folks, it just isn’t Irish Coffee if it doesn’t have Irish Whiskey in it!

Vietnamese Coffee
Vietnam has a great coffee heritage going back to French colonialization. Vietnamese coffee reflects French brewing sensibilities – in other words, the brewing process is part of the experience!
Each serving is prepared individually. I have included a link below where you can purchase the necessary individual filter(s) that you place over each cup in preparation. Works equally well served hot or over ice – in fact, this is my favorite iced coffee!
AUTHENTIC VIETNAMESE COFFEE

Ingredients
-
- 2 Tbsp Sweetened Condensed Milk
-
- 2-3 Tbsp
French Roast
-
-
- coffee, press grind
-
Ice (optional)
Directions
1. Fill bottom of Vietnamese Coffee Filter with coffee
2. Put condensed milk in bottom of cup
3. Place filter over cup 4. Pour near-boiling (190-200 degree F or so is perfect!) water into filter unit
4. Coffee will actually “melt” the condensed milk – when brewing is complete, either serve as-is or pour into large glass filled with ice.
